Today I am making a Kerala Style Spicy Potato Roast. This is a perfect side dish for rice and can go pretty well with rotis too. I love potatoes but I do not eat them often. But I know someone who is crazy for them. So I hope this recipe does justice.

Ingredients
- 2 tbsps of Coconut Oil
- 1 tsp of Mustard seeds
- 15-18 Curry Leaves
- 1 big Onion, chopped
- 3-4 cloves of Garlic, chopped
- 3 medium Potatoes, diced
- 2 tbsps of Chilli flakes
- ¼ tsp of Turmeric Powder
- Salt to taste
Instructions
- Heat up a non-stick medium saute pan. Add Oil. Let it heat up.
- Add mustard seeds to the oil and wait till it crackles.
- Add curry leaves, chopped onion, chopped garlic and salt. Mix it well.
- Saute till the onions and garlic are tender.
- Add chilli flakes and turmeric powder. Saute the spices.
- Add diced potatoes and salt and mix well.
- Cover and cook for 5 minutes till the potatoes are soft.
- Cook without lid for 5 minutes.
- Garnish with few curry leaves and we are ready to serve.
